Summer is officially upon us! And with that comes this family favorite. I sometimes take for granted that I grew up eating the most delicious foods…my mom just nailed it in the kitchen with EVERYTHING. Food is just super nostalgic for me. With age, I have grown to be even more sentimental about it and have been trying to recreate some of my favorites that she made for us growing up. This Mexican Shrimp Cocktail dish is so easy, super yummy and the perfect refreshing (and healthy!) treat. I just LOVE it so much! Now don’t stress…you can play around with this based on your personal taste and add/take away amounts and ingredients to your liking but the basic recipe my mom used (and passed on to me) goes like this:

INGREDIENTS:

  1. 2 bags of 30-40 precooked shrimp – I like a LOT of shrimp in mine. Deshell/devain or buy it that way, your call!
  2. 1 sweet yellow onion – I don’t use a lot of onion, about 1/4 of one but my mom does because my dad likes it. Ha!
  3. Avocado – I use 4 because I love it so much. I chop it into big chunks.
  4. Tomato – I use 4 and dice them into bigger chunks as well.
  5. Cucumber – I like to use just 1 large one. I take all of the seeds out before I cut it up by slicing it in half and using a spoon to slide out the seeds along the center of it.
  6. Cilantro – I use a lot of it…I chop it up pretty good. The smell is *AMAZING*!!!
  7. Lemon – 2
  8. Lime – 1
  9. Salt
  10. Pepper
  11. Clamato Juice – 64 oz
My end result. It’s seriously SOOOOO GOOD!!!!

Now let’s make this goodness! Clean all of your ingredients up, chop up all of your veggies and get yourself a big bowl. I start with the shrimp on the bottom so it can absorb all of the flavors as I add things. I then slowly add in all of the veggies as I chop them up. It’s actually super relaxing ha! I then sprinkle the salt and pepper on top (to taste) and add in the juice from the lemons and lime. I stir that all up and end it by adding the clamato juice last. If you don’t need this right away or are taking it to a get-together, I recommend adding the clamato juice to it once you get there. Store it in the fridge and ENJOY!!! It will be good for several days and it gets even better as the days go on, if you can even imagine! I serve it in cups with spoons/forks. It’s such a great summer treat!

*Note: This will make a big batch! I always like making this amount because we always eat it all. If you prefer to start with a smaller batch, do half of everything and get the smaller 32oz size Clamato Juice.
